We always buy lots of bananas and we are never sad to see a few of them get a bit over ripe and brown. To be honest we actually often let that happen on purpose, so that we can make banana loaf.
This recipe is a one that I have put together myself. I am not very good at sticking to one recipe, so I usually end up changing it to my liking and then the next time I will change it again. I started making this one last year and I dare say that it is now so good that I don’t change it anymore.
So without any further ado here is the recipe for My Favourite Banana Loaf
This makes 2 small loafs. It might sound a lot to make 2, but we usually end up eating almost a whole one on the day it is made and then the second will last around a week in a airtight container.
Ingredients
130 g sugar
2 tsp vanilla essence
200 g soft butter
2 eggs
250 g plain flour
2 heaped tsp baking powder
2 large (or 3 small) ripe bananas mashed
120 g chopped walnuts
120 g chopped dark chocolate
Method
Heat the oven to 180C/fan and make sure that a shelf is in the middle of the oven where the loafs are gonna be baking.
Beat butter and sugar together in a bowl with an electric whisk. Add the eggs, one at a time and beat until it has a fluffy consistency. Stir in the walnut and chocolate pieces with a wooden spoon. Add the mashed bananas. Lastly add the flour and baking powder and give the batter a good beating with an electric whisk.
Line two small loaf trays with baking paper and divide the batter between the two. Bake in the middle of the oven for 40 minutes. When finished baking cool for a few minutes in the trays and then lift out and let cool completely on a rack.
Bake for 40 minutes.
The ingredients. I am pretty sure that most of you have this in your cupboards.
After beating the sugar and butter together, add the eggs one at a time.
Stirring in the walnut and chocolate pieces with a wooden spoon.
Then adding the very important mashed banana.
Last but not least, the flour with the baking powder and vanilla powder added in.
Remember to mix the flour in with an electric whisk it makes the dough come together and get a smooth consistency.
The loafs ready to go in the oven.
