Cinnamon Cookies
I love traditions, especially around Christmas time. Creating new traditions as a family is very special as I know that these are going to be one of the things that my children will associate with Christmas. Me and James have been making these cookies every Christmas since we meet and little JJ loves them too.
They make the house smell amazing, is there anything more Christmassy than the smell of cinnamon!
Ingredients (55 or more cookies)
230 g soft butter
300 g caster sugar
2 eggs
350 g plain flour
2 tbs cream of tartar
1 tbs bicarbonate soda
1/4 tbs salt
1 tbs ground cinnamon
For the cinnamon sugar:
2 tbs ground cinnamon
120 g sugar
Method
Beat the soft butter and sugar together using an electric mixer. Add the eggs one at the time. In a separate bowl mix the flour, cream of tartar, bicarbonate soda, salt and cinnamon. Slowly add the flour mixture to the butter, sugar and egg mixture. This can be done by using an electric mixer at first but it will eventually become too dry and you will be better stirring it together with a wooden spoon.
In a separate bowl mix together cinnamon and sugar.
Roll little balls from the cookie dough. I make mine the size of teaspoons. Then roll the balls in the cinnamon sugar. In order to get enough cinnamon on the cookie ball use a spoon to drizzle it over the ball. The ball will look brown from the cinnamon and most of the sugar will fall off, but enough will stay.
Bake at 225 degrees Celsius for 8 minutes fan oven, non fan will be slightly higher temperature. All ovens are different, mine gets warmer at the back this means that I have to take the cookie tray out half way through to turn it around for an even bake. When baking these in my mothers oven I bake them on 200 degrees Celsius fan assisted and only for 7 minutes. I would recommend to just bake a couple first to find the perfect temperature and time for your oven. They should be soft when they come out of the oven and harden and get chewy as they cool down.
